Carrot Cake Slow Cooker Oatmeal

You’d never know that this also contains zucchini – this is why it’s so great to share tips with friends because credit for this idea goes to one of my closest girlfriends!

  • 2 cups steel cut oats
  • 1 can coconut milk
  • 2 cups non dairy milk
  • 2 cups water
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tbsp vanilla
  • 1 mashed overripe banana
  • 4 grated carrots
  • 2 grated zucchini

Add all of the above into your slow cooker. Cook on low for 8 hours. 
Top with whatever you love, but I recommend walnuts, coconut yogurt and/or golden raisins for the full carrot cake effect.
