I love this carrot ginger dressing for Fall with its complementing flavors.

- 2 carrots, peeled and chopped
- 2 shallots, peeled and chopped
- 1/4 cup chopped ginger
- 2 tbsp miso paste
- 1/4 cup rice vinegar
- 1-2 tbsp raw honey
- 2 tbsp toasted sesame oil
- 1/2 cup olive oil
- 1/4 cup water
- 1/2 tsp sea salt
Puree all ingredients in a blender until completely smooth.
