Spinach Overnight Oats

I eat this several times a week. Anytime I can include leafy greens into a meal, I’m happy. Other than the greenish hue, you would never guess there’s spinach in this. Filled with fiber, protein and healthy fats, it’s a great way to start a busy day!

Ingredients (I like to double and make two at a time):

  • 1/3 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp ground flaxseeds
  • 2/3 cup unsweetened plant milk
  • 1 scoop Sakara metabolism powder
  • 1 heaping tsp maca powder (optional)
  • pinch of cinnamon (optional)
  • 1 packet stevia (optional)
  • 2 cups spinach

Directions:

Pour the oats into a single serving container. Place the rest of the ingredients in a blender, and blend until completely liquified. Pour over the oat mixture and cover. Give a mighty shake, and store overnight in the fridge. Enjoy topped with coconut yogurt or almond butter!
