If you have overripe bananas but absolutely cannot make another loaf of banana bread, give these granola bars a try! No added sugar, gluten free and vegan. My kids absolutely LOVED these!
- 2 cups rolled oats
- 1/2 cup oat flour
- 2 tbsp chia seeds
- 2 tbsp ground flax
- 1 tbsp cinnamon
- 1/2 tsp vanilla powder
- Pinch of sea salt
- 2 overripe bananas
- 1/2 cup oat milk
- 1/3 cup almond butter
- 1/2 cup mini chocolate chips (we used Lily’s chocolate chips for no added sugar)
Grease a square baking dish with coconut oil. Combine dry ingredients first, then add wet one at a time until well combined. Stir in chocolate chips last. Press into baking dish, and bake at 350 for 25 minutes. Let cool completely, and then cut into rectangles or squares, whatever floats your boat.
