Now that we’re approaching the six month mark of when we began to stock our freezer for quarantine, it’s time to use those items – like chicken, cauliflower and spinach – up!

Butcher Box chicken thighs (from frozen)
Marinate in Coconut Secret garlic sauce and coconut aminos plus some Dijon mustard to taste. Grill on both sides until cooked through. Full disclosure: my husband handles the grilling.
Roasted cauliflower (from frozen)
Spread onto a baking sheet lined with parchment or Silpat, coat evenly with olive oil and season with sea salt. Cook for 30+ minutes at 425 degrees.
Sautéed spinach (from frozen)
Heat in a pan until completely hot and season as you like. I’m not going to pretend frozen spinach tastes anywhere near as good as fresh. I recommend it more for stir-fry dishes where it’s mixed with a lot of other ingredients, flavorings and sauces or in smoothies.
