Chocolate Chia Pudding

It’s no secret I love the Sakara Metabolism Powder, especially in my spinach overnight oats. I’m always looking to create new recipes with it, and this chocolate chia pudding is a winner! It’s so easy to make, and if you make it the night before, you’ll have a healthy and delicious breakfast ready for you in the morning. If you don’t have the metabolism powder, substitute with cacao powder.

Ingredients:

  • 3/4 cup unsweetened plant milk of choice
  • 2 tbsp coconut yogurt (I use The Coconut Cult original) – see note below
  • 1 scoop Sakara metabolism powder
  • 2 tbsp chia seeds
  • 1 packet stevia
  • 1/2 tsp cinnamon
  • Pinch of sea salt
  • Splash of vanilla extract or pinch of vanilla powder
  • Toppings of choice: chopped nuts, granola, berries, etc.

Directions:

Whisk all ingredients (except the toppings) in a large bowl or glass container until well combined. I like to use a mason jar with a lid to give it an extra few vigorous shakes. Store in the fridge for at least 15 minutes or overnight. When ready to eat, add your favorite toppings or eat your chocolate chia pudding plain.

Note: The coconut yogurt is important to the texture and consistency. Using a different type of yogurt may result in a runny, more liquid pudding. If you don’t have coconut yogurt, feel free to sub with 1/4 cup full-fat coconut milk such as this one.
