Home ec is back! Made my chocolate chip banana bread muffins with the kids this week. It’s possible not all the chocolate chips made it into the batter.
Wet ingredients:
- 3 very ripe bananas
- 2 eggs or flax eggs
- 1/3 cup vegan butter (I love Miyokos) melted
Dry ingredients:
- 1/2 cup coconut sugar (optional)
- 1 cup sprouted spelt or gluten-free or regular all purpose flour
- 1 tsp baking soda
- 1/2 tsp sea salt
Mix wet and dry ingredients separately before combining together. Be careful not to over mix.
Add 1/2 cup (or as many as make it) chocolate chips. In this batch, we omitted the coconut sugar and used Lily’s stevia-sweetened chocolate chips so there was no added sugar.
Bake at 350 for 18 mins or until toothpick comes out clean from center.
