Chocolate Chip Banana Bread Muffins

Home ec is back! Made my chocolate chip banana bread muffins with the kids this week. It’s possible not all the chocolate chips made it into the batter. 

Wet ingredients:

  • 3 very ripe bananas
  • 2 eggs or flax eggs
  • 1/3 cup vegan butter (I love Miyokos) melted

Dry ingredients:

  • 1/2 cup coconut sugar (optional)
  • 1 cup sprouted spelt or gluten-free or regular all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Mix wet and dry ingredients separately before combining together. Be careful not to over mix.

Add 1/2 cup (or as many as make it) chocolate chips. In this batch, we omitted the coconut sugar and used Lily’s stevia-sweetened chocolate chips so there was no added sugar. 

Bake at 350 for 18 mins or until toothpick comes out clean from center.
