This is great when you just want simple and easy.
Take any leftover veg you have, and sauté them in a pan with some fresh spinach (or any leafy green) and a little Miyokos Creamery nondairy butter. Add two beaten pasture-raised eggs (we like Vital Farms). Let it set, and then flip. My husband does this part for me because he can flip it in the air like the top chef that he secretly is whereas all I can think about is flying greasy splatter in my kitchen!
Season with sea salt and freshly ground black pepper, maybe some hot sauce, and you have dinner in less than 10 minutes!
